On The Road | New Zealand :: Cooking In Our Campervan

We’ve been in our campervan for a few weeks now and loving every minute of it! The biggest plus is being able to make home cooked meals (after eating out every day in Asia for 4 months), and we have really embraced the two gas stove cooker and fridge in our little van! One of the easy favorites non-pasta one pot meals is burritos – and by using ‘semi homemade’ ingredients, we don’t have to stock up on individual spices and it is relatively healthy but hearty.

Burrito Filling
500g ground chicken (can substitute ground beef or lamb)
1 can of Wattie’s Hot Chili beans (red kidney beans with spices)
1 can diced tomatoes
1 large white onion
Half packet Taco Seasoning

Guacamole
1 large avocado
1 tomato, diced
¼ red onion, diced
½ lemon or lime, squeezed
2 cloves garlic
Small bunch of cilantro or coriander (optional)
Small fresh jalapeno pepper, diced(optional)
Salt and Pepper to taste

Salsa
Shredded Cheese (Colby, Cheddar any on hand)
Sour Cream
Whole wheat Tortillas

Saute the white onion in olive oil or butter, until soft. Add the ground chicken and brown the meat. Once almost cooked, add the can of diced tomatoes, chili beans and half a packet of taco seasoning and ¼ cup water and simmer uncovered for about 20 minutes.

For the guacamole; dice the tomato, garlic, red onion and jalapenos. Add the avocado, lemon juice, cilantro, salt and pepper and mash!

Fill the tortillas with the filling, cheese, salsa, sour cream and guacamole. Enjoy!

  1. I am taking my daughter to New Zealand this September and October for the Rugby World Cup. I was searching "campervan cooking new zealand" and up popped your website. Seeing the video, I am thinking I will need to bring a cooking knife with me, it would drive me nuts to use a serrated knife like that!     • Campervans are the best way to travel in NZ! So much fun and you have your freedom to go wherever/whenever without having to rely on public transportation or finding a place to stay! Have fun!
